Diabetes-Friendly Meal Prep on AVMC Event Menu

Delicious holiday meals don’t have to be diet-busters. Antelope Valley Medical Center is going to demonstrate how to make a “Pinterest-worthy,” delicious, diabetic-friendly family meal just in time for the holidays on Monday, Nov. 5, from 5:30 to 7 p.m. at the Community Resource Center, 44151 15th Street West, in Lancaster. This free presentation will feature educational information, recipes and food samples.

“Holiday eating can be detrimental to anyone’s healthy diet, but it is especially challenging for people with diabetes,” said Jyothi Pinto, the hospital’s clinical dietician manager. “With just a few adjustments, a holiday meal can be tasty, enjoyable and healthy.”

Antelope Valley has the highest percent of adults diagnosed with diabetes and the second-highest death rate from diabetes in Los Angeles County. A carbohydrate-heavy diet of breads, rice and soda, for example, can lead to higher than normal glucose levels, which can then lead to problems with the heart, eyes and kidneys.
